Easy Chilaquiles & Fried Eggs

Ingredients

● 4-5 cups store bought tortilla chips (thick, sturdy ones work best)

● 2 cups prepared salsa verde

● 4 eggs

● ½ cup crumbled queso fresco

● ½ avocado, diced

● 2 tbsp cilantro, chopped

● Lime wedges for serving

Instructions

1. Warm salsa in large skillet over medium heat.

2. Add tortilla chips and toss quickly - just enough to coat (keep them crisp)

3. Plate tortilla chips immediately

4. Fry eggs separately to your liking (sunny-side or over-easy works best).

5. Top tortilla chips with eggs, queso fresco, crema, avocado, onion, cilantro and lime.
