Soft Scrambled Eggs on Toast

Ingredients

● 4 large eggs

● 1 tbsp heavy cream (optional, for extra richness)

● 1 tbsp butter (plus 2 tbsp for browning)

● Salt, to taste

● Freshly cracked black pepper

● 2 slices of sourdough or brioche toast

● 1 tbsp chopped fresh chives

Instructions

1. Brown the butter: In a small pan, melt 2 tbsp butter over medium heat until golden and

nutty. Set aside.

2. Beat the eggs: In a bowl, whisk eggs with cream and a pinch of salt until smooth.

3. Soft scramble: In a nonstick skillet, add 1 tbsp butter over low heat. Pour in eggs and stir

constantly with a spatula until creamy curds form (2–3 minutes). Remove from heat just

before fully set.

4. Serve: Spoon eggs over warm toast. Drizzle with brown butter, sprinkle with chives, and

add black pepper to finish.

Chef’s Note

The key to soft, creamy eggs is low heat and constant stirring — patience pays off here.
